Welcome, Hani Elgelda, the new Executive Chef at the WhiteCaps Drinks + Eats restaurant located in the lobby of the DoubleTree by Hilton Hotel San Francisco Airport North. Opening the interview, Hani stated, “I grew up in Daly City and knew I always wanted to be a chef. My earliest memories are preparing many meals together, with the guidance of my mom, for our family and friends. When I was a high school senior, the California Culinary Academy visited Westmoor High School to speak about careers in the food industry.”
Hani began his journey, in 2004, to become an executive chef by earning his associate’s degree in the field of Culinary Arts. He built his craft at the Crowne Plaza Hotel in Burlingame working in various roles. In 2006, he moved to the San Mateo Marriott San Francisco Airport as a line supervisor and worked his way up to Executive Sous Chef. Hani said, “I was honored, when J.D. Smith, General Manager, recruited me to become the Executive Chef at WhiteCaps Drinks + Eats. I said yes and I began my new position on January 1, 2020!”
I asked Hani to speak about his core values and how those are reflected in managing both the restaurant and bar. He replied, “My three core values are: (1) providing quality, exceptionally delicious and locally sourced, organic and sustainable food (2) exemplary customer service, and (3) building and maintaining quality relationships.
Continuing, we spoke about the warm and welcoming atmosphere of the DoubleTree and WhiteCaps Drinks + Eats that guests experience. Hani said, “We have a great team here. We work hard to serve our customers while having fun. I believe in collaboration and listening. When everyone is having fun and working as a team, that’s when great food dishes are created.”
I learned that Hani is working on a new menu, to reflect the variety cuisines in the San Francisco Bay Area. The menu will change seasonally to feature fresh ingredients from produce to fish, crab, and meat. He commented, “I believe strongly in local-sourced food because of its flavor and nutrition. And, it’s fresher and tastes better. I want our menu to reflect the local favorites from Asian, Latino, Mediterranean and American cuisines so our guests can experience the world culture that the SF Bay Area offers. Our fresh salad options are also not to be missed and we have a variety of unique vegetarian dishes.”
Hani also mentioned WhiteCaps Bar + Eats bar which he explained is an environment in which “guests enjoy meeting and mingling with people and relaxing. We offer 8 beers on draft, 6 of which are dedicated local Artisan California craft beers including Fieldwork that is a local brewery from Berkeley. We have unique and handcrafted classic and signature cocktails which are made with house-made syrups, featuring local and elite spirits, and fresh ingredients.
